CHARACTERISTICS :

Deep purple colour. Nose is airy, intense, with fine aromas evoking the Morello cherry, the black plums and blueberries. Chocolate and graphite notes come along, intertwined with violet flowers and wild roses, with a hint of spices. Fine and complex, with well-defined aromas. Palate is dry, high, tonic acidity, in a juicy manner, with high and tight tannins, but very fine-grained, texture is silky and dense, alcohol feels generous but is integrated with the body, the flavours are pronounced. A spicy profile, where dark fruit mixes up with cloves, chocolate and liquorice. Long, ever-lasting, with wild cherry bitterness and black chocolate note lingering on the aftertaste. 10-15 years to reveal and 30 years plus for the potential.

Ideal partner for wild dear fillet, pan seared and accompanied with blackcurrant sauce, chanterelle mushrooms and chestnuts.
